October Trilogy // semi chocolate cake recipe


For the second part of the trilogy I have made Chocolate cake with clementine cream cheese frosting and sprinkles. You can't have cake with out sprinkles right? 

                                                                                                                                                                             
As you can see form the photos I didn't actually make the cake from scratch but I did change a few things in the ingredients. : ] You could make a cake from scratch if you want, the only reason I didn't is because a.) I am still setting up my kitchen and I don't have all the tools or ingredients to make cakes from scratch. and b.) because it is easy and I wanted to. Who doesn't like a good cake mix right? I got this cake mix from the "America Shop!" which is in our neighborhood! PTL. So if you are going to follow my recipe here it goes. 

For the Cake: 
1. Follow direction on the back of the box. 
2. Substitute oil for equal amount of butter. Because butter is better. 
3. Add one small pack of plain yogurt to add moisture to the cake. 
4. Bake cake according to box. 

For the Icing: 
1. Take one pack of cream cheese and let it sit out so that it is at room temperature. 
2. When are room temp put in mixing bowl and add lots of powdered sugar. 
(fun fact: Did you know that in Spain powder sugar is called Azucar Glass?) the reason I don't actually have a measurement for you is because some people like their frosting super sweet and others not, so just eye ball it. 
3. Add the juice of one clementine. This just adds a bit of citrus to the icing but since a clementine is so sweet and small the flavor isn't too intense. Of course you add more if you like. 

The Plating: 
I though it would be fun to show you a way to serve cake for a party! I bought these wee pumpkins at the shop the other day and I thought they were the perfect size for cake! 
So what I did was spoon out small pieces of cake and place in pumpkin then layer in the frosting. Repeat a couple of time till full. You want the frosting to be the last layer so that you can add  some fun sprinkles! 

A couple of notes to think about: 

Cream cheese frosting is very rich so a little goes a long way. Also these pumpkins are pretty small so if you know your guests are big dessert fans maybe this isn't the best way to present the cake. Maybe just keep the whole cake just the way it is? Or make cup cakes. I love having so many options. Also adding more juice to the cream cheese would add more flavor but will also make the frosting thinner. This cake is super easy to make since it is from a box great for if you are hosting a party and need to spend time on other things.
